Hazard Analysis Critical Control Point (HACCP)
Legislation (Article 5 Regulation (EC) No 852/2004 on the hygiene of foodstuffs) requires that food operations must put in place, implement and maintain permanent procedures based on HACCP principles and that these procedures must be documented to demonstrate the effective application of the measures that have been introduced.
